Feature Focus: Go Thick with a Floating Hinge
If you’re a fan of stuffed burgers, Panini or thick-cut steaks and chops, then you need a contact grill with a floating hinge. It allows you to cook thick and thin foods with the great results, so you can enjoy greater variety in your grilled menu with foods you wouldn’t normally be able to fit on your indoor grill. You can do your favorite bistro and steakhouse meals at home, while you knock out the fat for healthier meals.
The floating hinge is a specialized part that connects the top grill plate and casing to the bottom of the grill. With a regular indoor contact grill, the hinge that connects these two pieces is fixed, so the cover of your grill always closes to the same height. On the other hand, the hinge used in a floating hinge contact grill has give that allows the height of the top plate to adjust automatically to the thickness of your food.
This way, you can fit thicker cuts of meat, stuffed burger patties and sandwiches on your contact grill without smashing them when you close the top plate. On the flip side, when you cook thinner cuts of meat and veggies the hinge still closes so the top plate is resting directly on top of the food to cook. In this way, you can cook skirt steak for fajitas one night and thick-cut lamb chops the next, both with evenly cooked, consistent results.

Classic Grilled Cheese a la George
• 2 slices white bread
• 1 tbsp. melted or softened butter
• 3 to 4 slices American cheese
Adjust the angle of the grill to the sloped position and place the drip tray in front of the grill. Place the cross hatch top plate and bottom grill plate on your Evolve™ Grill and preheat to 350ºF with time set at 20 minutes.
Temperature will stop flashing when preset time has been reached.
Place 1 slice of bread on cutting board. Butter one side and turn over. Place cheese on unbuttered side of bread. Top with remaining slice of bread. Butter outside of bread.
Place on preheated grill and close the grill cover. Grill for about 3 minutes or until sandwich is golden and cheese is softened.
Makes 1 sandwich.
Grilled Provolone & Tomato
• 2 tbsp. melted butter
• 4 slices thickly sliced white bread
• 4 slices Provolone cheese
• 1 medium tomato, slices
Adjust the angle of the grill to the sloped position and place the drip tray in front of the grill. Place the cross hatch top plate and bottom grill plate on your Evolve™ Grill and preheat to 350ºF with time set at 20 minutes.
Temperature will stop flashing when preset time has been reached.
Spread melted butter on one side of each slice of bread.
Place 2 slices of bread buttered side down on cutting board, divide cheese between both slices. Arrange tomato slices on cheese. Cover with remaining slices of bread with buttered side up.
Place on preheated grill and close the grill cover. Grill for about 3 minutes or until sandwich is golden and cheese is softened.
Makes 2 sandwiches.
Grilled Ham & Swiss
• 1 tbsp. melted butter
• 2 slices thickly sliced Artisan bread
• 3 slices thinly sliced deli ham
• 3 slices Swiss cheese
• 1 medium tomato, slices
Adjust the angle of the grill to the sloped position and place the drip tray in front of the grill. Place the cross hatch top plate and bottom grill plate on your Evolve™ Grill and preheat to 350ºF with time set at 20 minutes.
Temperature will stop flashing when preset time has been reached.

Place 1 slice of bread buttered side down on cutting board. Top with ham, cheese and tomato slices. Cover with remaining slice of bread with buttered side up.
