Remove upper grill plate to expose broiler.
Attach lower griddle plate. Preheat Grill & Broil on HIGH Broil.
In medium bowl, lightly season cornstarch with salt and pepper. Add cubed chicken and toss to coat.
In large skillet, heat oil over medium-high heat. Sauté garlic, ginger and red pepper flakes for about 1 minute.
Add chicken and continue to cook for additional 6-7 minutes or until chicken is cooked through.
Meanwhile, whisk together all sauce ingredients.
Pour sauce over chicken and continue to cook for additional 1 minute.
Unroll pizza crust and cut in half. Place one half in griddle plate and cook on HIGH Broil for 3-5 minutes.
Using silicone spatula, flip crust and top with 1 cup Monterey Jack, ½ of diced red pepper and half of chicken.
Cook on HIGH Broil for additional 4-5 minutes, or until cheese is melted and bubbly. Remove from griddle plate and cut into 6 pieces.
Repeat with remaining pizza crust and ingredients.
