GRILLED CHICKEN WITH CHIPOTLE PEACH SAUCE

Perk up grilled chicken breasts with sweet peach preserves and smoky chipotle chiles.

INGREDIENTS

  • 4 boneless skinless chicken breasts
  • 3 large peaches rinsed, pitted and cut in half

Marinade/Sauce

  • 1/3 cup peach preserves
  • 1/3 cup peach nectar
  • 1 tbsp lime juice
  • 4 tsp red wine vinegar
  • 2 tsp adobo sauce from canned chipotle chiles
  • 2 whole chipotle peppers in adobo sauce, minced
  • 1 tbsp minced cilantro; plus, sprigs for garnish
  • 2 tsp olive oil

DIRECTIONS

  1. Preheat your GEORGE FORMAN® grill to 425°F. Stir preserves, nectar, vinegar, chipotle peppers and sauce, olive oil, and cilantro. Season with salt and pepper. Transfer ¼ cup to a small bowl- this will be used as a marinade while cooking.
  2. Place the peaches on the preheated grill and brush with marinade from small bowl. Grill peaches until slightly charred, about 4 minutes. Set on a cutting board. Allow to cool slightly then rough chop and add to sauce (not the small bowl).
  3. Place the chicken on the grill, sprinkle with salt and pepper, then brush with marinade from small bowl. Grill chicken until cooked through, about 10 minutes.
  4. Place chicken on plate and top with peach sauce. Garnish with cilantro if desired.
