GRILLED CHICKEN WITH CHIPOTLE PEACH SAUCE

Perk up grilled chicken breasts with sweet peach preserves and smoky chipotle chiles.

INGREDIENTS

  • 1/3 cup peach preserves
  • 1/3 cup peach nectar
  • 4 boneless skinless chicken breasts
  • 1 tbsp lime juice
  • 3 large peaches rinsed, pitted and cut in half
  • 4 tsp red wine vinegar
  • 2 tsp adobo sauce from canned chipotle chiles
  • 2 whole chipotle peppers in adobo sauce, minced
  • 1 tbsp minced cilantro; plus, sprigs for garnish
  • 2 tsp olive oil

DIRECTIONS

  1. Preheat grill to 425°F. Stir preserves, nectar, vinegar, chipotle peppers and sauce, olive oil, and cilantro. Season with salt and pepper. Transfer ¼ cup to a small bowl.
  2. Place the peaches on the preheated grill and brush with dressing from small bowl. Grill peaches until slightly charred, about 2 minutes. Set on a cutting board. Allow to cool slightly then rough chop and add to dressing (not the small bowl).
  3. Place the chicken on the grill, sprinkle with salt and pepper, then brush with dressing from small bowl. Grill chicken until cooked through, about 5 minutes.
  4. Place chicken on plate and top with peach dressing. Garnish with cilantro if desired.
