AIR FRYER RUEBEN EGGROLLS

A New Take on a Classic: Melty cheese, warm tangy dressing, and salty corned beef are rolled into a neat, crispy package that makes it hard to eat just one.

INGREDIENTS

  • 6 eggroll wrappers
  • 3 (2 oz) packages deli corned beef
  • ¾ cup sauerkraut
  • ¼ cup Thousand Island dressing
  • 1 cup shredded Swiss cheese
  • 2 Tbsp. butter, melted

DIRECTIONS

  1. On a large cutting board, lay out the eggroll wrappers. Layer each wrapper with corned beef, sauerkraut, dressing and cheese leaving about a ¼" edge around the wrapper.
  2. Fold in the sides of the wrappers, and tightly roll the wrapper from bottom to top.
  3. Brush all sides of eggrolls with melted butter.
  4. Place baking rack in the bowl in the low position and place 3 eggrolls on top.
  5. Tap the grill button and set temperature to 425°F and fry for 15, flipping halfway through. Repeat with remaining eggrolls.
  6. Serve hot with additional Thousand Island dressing for dipping.
