Using 3 shallow plates, mix flour, salt and pepper in one, egg in the second and bread crumbs in the third.
Dredge each slice of eggplant first in flour, then in egg and lastly in bread crumbs.
Preheat Contact Roaster.
Brush a little oil in roaster and add eggplant. Set timer and cook, covered, 10 minutes or until golden brown. Turn eggplant slices over and cook an additional 10 minutes. Remove from roaster.
Pour basil pesto sauce into baking pan. Set timer; heat 10 minutes. Add eggplant to sauce and serve hot.
