Top each egg nest with chopped chives and serve at your next brunch for a fun take on eggs.


  • 1 cup frozen hash browns, thawed and shredded
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup red bell pepper, finely diced
  • 3 slices bacon, cooked and crumbled
  • salt and pepper to taste
  • 12 medium eggs
  • 2 Tbsp. chopped chives


Remove upper grill plate to expose broiler.

Attach lower griddle plate. Preheat Grill & Broil on LOW Broil.

In medium bowl, mix together hash browns, cheese, pepper and bacon. Season with salt and pepper.

Place spoonful of mixture into each muffin cup. Press mixture down and up the sides, using fingers to shape into nests.

Place muffin pan in preheated griddle plate and cook on LOW Broil for 12-15 minutes until hash browns start to brown.

Crack egg into each nest and season with salt and pepper.

Broil for 6 minutes. Rotate muffin pan 180° and broil for an additional 4 minutes, or until egg whites are set. Repeat with remaining mixture and eggs.
