AIR FRYER CHICKEN THIGHS WITH SALT AND VINEGAR POTATOES

Perfect Pairings: The timeless pairing of salt and vinegar transforms new potatoes into crispy spuds you won’t be able to get enough of. Air fried chicken thighs are the perfect pairing to these salty sour tubers.



INGREDIENTS

  • 1 lb. new potatoes, washed and cut in half
  • ¾ cup distilled white vinegar
  • 1 lb. bone-in, skin on, chicken thighs
  • 4 Tbsp. chicken seasoning
  • 1 Tbsp. olive oil
  • 1 tsp. salt, divided

DIRECTIONS

  1. In a large pot, add potatoes and vinegar. Fill the pot with water to cover the potatoes by 1”.
  2. Bring pot of potatoes and water to a boil over high heat and boil for 20-25 minutes, until potatoes are fork tender.
  3. Meanwhile, season chicken thighs with chicken seasoning. Place chicken thighs in the drum and fit the lid on top. Insert into the bowl.
  4. Tap air fry and set temperature to 425°F and fry for 25-30 minutes, or until chicken reaches an internal temperature of 165°F.
  5. While the thighs cook, drain the potatoes and toss with olive oil and ½ tsp. salt.
  6. Remove chicken thighs from the drum and place potatoes in the drum. Fit the lid on top and insert into the bowl.
  7. Tap air fry and set temperature to 425°F and fry for 20-25 minutes. Remove potatoes and toss with remaining ½ tsp. salt.
  8. Serve chicken thighs and potatoes with your favorite steamed vegetable.
