AIR FRYER BOURBON PEACH BBQ KABOBS

Bringing the BBQ Inside: No longer worry about overcooked meat and undercooked veggie kabobs. In just 10 minutes you’ll be left with smoky sweet, perfectly cooked beef kababs.

INGREDIENTS

  • ¼ cup packed brown sugar
  • ½ cup ketchup
  • ¼ cup water
  • ¼ cup bourbon
  • 1 Tbsp. minced garlic
  • 1 medium peach, peeled and pitted
  • 1 Tbsp. apple cider vinegar
  • 1 lb. beef for stew
  • 1 green pepper, seeded and cut into 1" pieces
  • ½ small red onion, cut into 1" pieces
  • 1 cup pineapple chunks
  • Salt and pepper for seasoning

DIRECTIONS

  1. In a small saucepan, heat the brown sugar, ketchup, water, bourbon and garlic over medium-high heat and bring to a boil.
  2. Meanwhile, cut the peach into 1” cubes and place in the jar of a small food processor. Add the apple cider vinegar and blend on low speed until smooth.
  3. Turn the heat down to medium and pour the peach puree into the saucepan. Simmer for an additional 5-6 minutes until the sauce thickens.
  4. Meanwhile, place the beef, pepper, onion, and pineapple onto the skewers. Season both sides of the kabobs with salt and pepper.
  5. Fit the skewers into the holder plates and insert into the bowl. Pour half of the BBQ sauce over the top.
