GRILLED GREEK CHICKEN KABOBS WITH TZATZIKI SAUCE

INGREDIENTS
6-inch wooden skewers
Marinade:
2 lbs. chicken breasts cut into 12 strips
2 tbsp olive oil
1 tsp dried mint
2 tbsp plain yogurt
Salt and pepper to taste
2 tbsp red wine vinegar
2 tbsp minced garlic
2 tsp dried oregano
Tzatziki sauce:
½ cucumber
1 tsp dillweed
1 tbsp lemon juice
1 tsp minced garlic
1 tbsp olive oil
½ cup plain yogurt
DIRECTIONS
- In a large bowl add olive oil, yogurt, vinegar, garlic, oregano, mint, salt, and pepper. Mix together to combine.
- Add chicken to marinade, toss to coat. Cover and place in the refrigerator for at least 2 hours.
- Make the tzatziki sauce: Peel the cucumber and use a spoon to scoop out all the seeds. Finely dice the cucumber and add it to the bowl. Add yogurt, lemon juice, olive oil, dillweed, garlic and salt and pepper to taste. Mix until fully combined. Cover and refrigerate at least 20 minutes or overnight.
- About an hour before grilling, soak the wooden skewers in water. Thread the strips of chicken onto the skewers.
- Preheat the your GEORGE FORMAN® grill to 425°F. Once the grill is preheated, place the skewers on the grill. Cook for about 4 minutes or until a thermometer inserted in the thickest part registers 160°F or above.
- To serve: Can eat just by dipping into the tzatziki sauce or you can pull out the skewer and make a pita sandwich with the suggested toppings.
