BREAKFAST BLT WAFFLE

BLTs for breakfast! Serve topped with lettuce, mayo and sliced avocado.

PREP TIME: 20 Min | COOK TIME: 10 Min | TOTAL TIME: 30 Min | SERVINGS: 4

INGREDIENTS

6 strips bacon

2 Tbsp. reserved bacon grease, slightly cooled

1 tsp. baking soda

6 eggs

½ cup flour

¼ tsp. pepper

¼ tsp. salt

¾ cups chopped cherry tomatoes

½ cup shredded mozzarella cheese

DIRECTIONS

Preheat oven to 425°F and line cookie sheet with aluminum foil.

Place 6 strips of bacon on lined cookie sheet and bake for 10-12 minutes, until crisp.

Carefully pour bacon grease into ramekin, or other heat-proof dish and allow to cool slightly.

Once bacon is cool enough to handle, crumble and set aside.

Attach upper and lower waffle plates and preheat Grill & Broil to 400°F.

In medium bowl, whisk eggs with reserved bacon grease.

Mix in flour, baking soda, salt and pepper until combined.

Add cherry tomatoes, cheese and crumbled bacon and fold into batter.

Pour ½ cup batter into center of each waffle plate. Close lid and cook for 5 minutes, or until waffles have puffed up.

Remove waffles and place on wire rack. Repeat with remaining batter.

 

Tip: Serve topped with lettuce, mayo and sliced avocado.
