PEACHY BLUEBERRY BUCKLE

If you really love deserts but you may not be the strongest baker, try this simple combination in the Foreman contact roaster. Simple yet so easy to make, you’ll definitely make it again.

INGREDIENTS

  • 1 tart apple, cored and diced
  • 1 tsp. baking powder
  • ½ cup fresh blueberries
  • ¼ cup brown sugar
  • 1 Tbsp. butter, softened
  • 5 Tbsp. butter, softened, divided
  • ¼ tsp. ground cinnamon
  • 3 eggs
  • 1 cup flour
  • 1 pkg. (16 oz.) frozen peaches, thawed
  • 2 Tbsp. turbano sugar (sugar in the raw)
  • ½ tsp. salt
  • ¾ cup sugar

DIRECTIONS

Cream 4 Tbsp. butter with sugars in a large mixing bowl using an electric hand mixer. Add eggs, one at a time, beating well between each addition. Add flour, baking powder, salt and cinnamon. Fold peaches and apples into the batter; set aside.

Preheat roaster 5 min. Melt remaining 1 Tbsp. butter in baking pan and distribute melted butter evenly on bottom and sides of pan. Spoon batter into baking pan; top evenly with blueberries and turbano sugar. Set timer and bake 15 min.

Open lid and gently stir the outer batter toward the center of pan. Close lid and bake an additional 15 min. Turn off roaster and let stand covered, 10 min. to set.

Tip: Serve warm with caramel ice cream or cold fresh cream.
